Quinoa Pancakes

In a large bowl, combine all 1 cup of Quinoa, 1/2 tsp baking powder 1/4 tsp vanilla extract, 1 egg, 1 tsp honey and mix it well in one direction until it forms a smooth paste.
Heat a large pan on a low medium flame.
Add 1 tbsp coconut oil to the pan.
After the paste is ready, mould it into the shape of pancakes and place it on the pan.
Let it cook for 1-2 minutes on one side until it turns goldish brown.
After that, turn it the other side and cook it again for 1-2 minutes.
Once ready to eat, garnish it with honey and blueberries to add to its sweet taste.

Quinoa Salad

Combine 1 cup rinsed Quinoa with water and bring it to boil. Cook it until quinoa absorbs water. Remove the heat and cover it to make quinoa fluffy.
Once quinoa is cooled, combine it with Chick-peas, Bellpepper, Onion, Cucumber, and Parsley (Your choice)
Then take a small bowl and add 2 tbsp olive oil, 2 tbsp lemon juice, and a pinch of salt. Whisk it and add it to the quinoa mix
Season it with black pepper or extra salt if necessary

Combine 2 cups of cooked quinoa, 2 eggs, and 1 tsp of salt in a medium bowl. Stir in the 1/3 cup chopped onion, 1/3 cheese, and 3 finely chopped garlic cloves.
Add 1 cup of bread crumbs, stir, and let sit for 5 minutes so the crumbs can absorb the moisture.
Heat the 1 tbsp olive oil in a skillet over medium-low heat, add the patties with some room between each.
Cover, and cook for 10 minutes or until the bottoms are deeply browned.
Flip the patties with a spatula and cook the other side for 5 minutes, or until brown.
Place the patty, cheese, onions and spread sauce of your choice on the buns and enjoy!
